WINE MAKING AND SHARPENING
After cryomaceration and fermentation at 18°C for about 20 days, part of the mass ferments with the skins in terracotta amphorae for 6 months and the remainder in steel tanks with bâtonnage. The subsequent ageing in bottle highlights the varietals with perfume of flowers, medicinal herbs, as well as ripe citrus. It expresses the calcareous soil and stands out for its lively sapid expression and subtle mineral nuances.
