Corvo Irmàna Nero D'Avola DOC

Intense red color with purple reflections, accompanied by a bouquet with intense notes of wild black cherry and red plum. A harmonious and opulent taste that is ample and enveloping on the palate. The sip is perfectly balanced between aromas of red fruit.

Excellent in combination with Mediterranean cuisine, pasta flans, grilled meats, medium-aged cheeses.

Serve at 16-18 °C.

100% Nero D'Avola grapes from 20 (average) year old vines.

Strictly manual harvest with selection of the best grapes from the first to the fourth week of September.

After the removal of the stems and a light pressing of the grapes, the grapes arrive inside the fermentation tank where the temperature is managed to start the alcoholic fermentation and the maceration of the skins. The fermentation is followed by a further maceration of the skins in the wine for at least 5 days. The resulting wine then awaits the natural malolactic fermentation and rests with its own yeasts in steel tanks, until bottling.

After bottling, it rests a month in the cellar for ageing before being released.
