WINE MAKING AND SHARPENING

To allow for a prolonged contact of the must with the skins, the fermentation occurs in stainless steel tanks at controlled temperature. Maturation is then carried out for 6-7 months in wine vats prior to bottling, followed by a minimum of another 3 months of bottle ageing.
