WINE MAKING AND SHARPENING

This is a white wine with a rare structure and a soft round taste. The Malvasia di Candia Aromatica grapes first get accurately selected and handpicked, then cold macerated one night with its skins before being vinified, partly in steel and partly in tonneau. It ferments slowly at a controlled temperature.
