WINE MAKING AND SHARPENING

Selected and harvested by hand, after destemming of the grapes, the Barbera macerates for less than 6 hours on the wine skins directly into the soft press. Then, after fermentation at 17°C, the wine ages for 6 months Sur Lies in stainless steel tanks with batonnâge following the long Charmat method, developing yeast aromas that complement those of pink grapefruit and red fruit typical of the varietal.
