Produced with handpicked and -selected grapes from vineyards which enjoy excellent climate conditions favorable for a complete grape’s maturation. This wine is a product of the classical Parmesan vinification tradition, according to the Martinotti Method; it is bottled the spring after the harvest and only after second fermentation is completed in autoclaves.
