From handpicked and -selected grapes, grown in vineyards which enjoy excellent exposure for complete maturation. This wine is produced without micro-filtration. It naturally completes the second fermentation inside the bottle due to living yeasts' action, according to the Pet-Nat ancestral method. Yeasts create even the characteristic deposit in the bottle.
